Salmorejo

 

Hi there cocinero! Today I show you how to prepare a delicious and healthy salmorejo. It is perfect in hot summer days. The traditional recipe is made with bread too, which makes it thicker but personally I find it more refreshing without it. The key ingredient are the tomatoes, they have to be tasty and full of flavour so it is a good idea to visit your local food market to buy them.

INGREDIENTS

10 ripe tomatoes

2 eggs

80 g serrano ham

1 garlic clove

a pinch of pepper

a pinch of salt

sugar (depending on the tomatoes you use)

 

STEP BY STEP

Boil the eggs.

Roughly cut the tomatoes into four smaller pieces. Add half of the garlic or as much as you want. Tip: start with small pieces of garlic and try the mixture, add more if you want!

Blend the tomatoes and the garlic. Add as much pepper and salt as you want (and sugar if needed). Tip: you can use a strainer to remove the skin and the seeds of the tomatoes.

Roughly cut the boiled egg and the serrano ham and add them to the tomato soup. Drizzle a little bit of extra virgin olive oil on top and enjoy cocinero! Tip: put in the fridge for a couple of hours to make it super refreshing.
