Pollo al chilindrón | Chicken chilindron


Chicken… what a versatile product. You can use it for almost everything. A very traditional way of cooking it in the north of Spain is with chilindron sauce, a sauce made up with peppers and tomatoes (you can use this sauce for lamb too). So yes, today I’m bringing you the recipe to prepare pollo al chilindrón! Cheap and flavourful ingredients, what can go wrong?

Difficulty: I can light the stove



6 pieces of chicken 

150 g serrano ham

2 garlic cloves

1 onion

1 red bell pepper

1 green bell pepper

500 g vine tomatoes

a glass of white wine



Fry the chicken in a pan with olive oil.

When it is golden remove from the pan and reserve.

Cut the bell peppers and the onion in julienne strips and fry them with the same oil used for the chicken.

Add the minced garlic and the serrano ham and mix. Let everything to cook together for 5 minutes more.

Add the diced tomatoes and mix. Let them cook at low heat.

At this point, you want as much flavor as possible. For that reason, I add fresh rosemary and thyme. You could also add a cup of chicken broth or tomato sauce if you want to get more sauce.

Add the chicken and the glass of wine and cook at medium-low heat for 10 minutes.

Your chicken chilindron style is ready cocinero!
