And the second recipe of this week is (drum roll please)… pisto manchego! A very quick, easy and healthy recipe traditionally made with pepper, tomatoes and courgettes. Nothing else. As most of the Spanish food, a humble recipe with seasonal ingredients. It had its origin in La Mancha, but is soon extended all along Spain, where it is possible to find small variations that include eggs, pork sausages or other veggies.

Difficulty: I can light the stove
1 red pepper
1 green pepper
1 garlic clove
500 g plum tomatoes
STEP BY STEP
Peel, chop and fry the onion in a pan with EVOO.
Chop the peppers and add them to the onion once the onion has a light golden color.
After ten minutes add the courgettes.
Allow all the veggies to fry together for 15 minutes. Then, blend the tomatoes and add them.
Cook all together for 10 minutes more or until the tomato sauce has reduced. You can add some herbs at this point to gain extra flavor. I love adding thyme, oregano and ground nutmeg but you can go creative!
