Papas arrugadas con mojo

Today I’m finally coming over with a traditional recipe from the Canary Islands: papas arrugadas con mojo. A quick, easy and delicious recipe for everyone, with easy to find ingredients (UK).

INGREDIENTS
400 g baby potatoes
200 g coarse sea salt
For the green “mojo”: 2 garlic cloves, fresh coriander, 100 ml EVOO, green pepper, a teaspoon of vinegar, cumin.
For the red “mojo”: 2 garlic cloves, 100 ml EVOO, chili flakes, a teaspoon of vinegar, cumin, 1 teaspoon of sweet paprika, 1 teaspoon of hot paprika.
STEP BY STEP
Put the potatoes in a pot with the sea salt and cover them with water. Boil them until the water evaporates completely.
Blend all the ingredients of the red “mojo” together.
Blend all the ingredients of the green “mojo” together.
Serve the potatoes with the mojos and enjoy dipping!
