Leche frita | Fried milk


Hi cocinero! How are you? Hope you had a great beginning of the week. Today I bring you a new dessert to your repertoire: leche frita (fried milk). Ok, I’m aware this sounds weird. Don’t worry, as always it is something delicious! Basically, you use corn flour to solidify milk and then you fry it. Easy and yummy!

Serves: 4 

Difficulty: I can light the stove



400 ml milk

35 g corn flour

80 g sugar

1 egg

lemon zest

a cinnamon stick

ground cinnamon



Warm up 300 ml of milk (not all of it!), with the lemon zest and the cinnamon stick.

Before it starts boiling, cover with the lid, remove from the stove and let it rest for 20 minutes.

Use a strainer to remove the lemon zest and the cinnamon.

Use the remaining 100 ml of milk to dissolve the corn four.

Add the milk with the cornflour to the pot with milk and mix really well.

Cook the mixture at a low temperature and keep stirring all the time until it becomes thicker (approx. 10 minutes depending on your hob).

Pour the mixture into a glass tray (before that, pour a little bit of sunflower oil in a piece of kitchen paper and spread it over the tray).

Cover with cling film. Make sure the film is in touch with the mixture. We want to avoid the formation of a crust. Put it in the fridge for at least 3 hours. You can leave it overnight too.

Cut the solid milk into small squares or rectangles.

Coat it with corn flour.

Coat with egg.

Fry in hot sunflower oil.

Use kitchen paper to remove the excess of oil.

Serve and enjoy!

p.s. you can spread some sugar and ground cinnamon on top 😉
