Huevos rotos con jamón | Broken eggs with ham


Hi cocinero! Today I’m presenting you what is going to be your next favorite food: huevos rotos con jamón (broken eggs or star eggs with ham). That is, basically, fried potatoes topped with jamón serrano and fried eggs. The secret relies on the eggs, that must be fried only until perfectly over easy so that the yolk, when broken, coats the potatoes and the ham. This is my favorite version of huevos rotos, but you can prepare them without ham, or with chorizo instead. You can find this tapa in every Spanish bar, but as you can see you can prepare it at home in a few minutes!

2 big potatoes

2 eggs

4 jamón serrano slices



Peel, cut and fry the potatoes.

Fry the eggs.

Serve the potatoes, with the jamón and the eggs on top and enjoy!
