Flan de huevo | Egg pudding


Hi there cocinero! It is time for a classic and delicious dessert! Today I show you how to prepare flan de huevo (egg pudding). Flan can be prepared in many different ways including ingredients such as chocolate, coffee or fruits but I love this one, this is the simplest recipe so it is perfect for beginners too. In this case, I am using cinnamon to give it extra flavour but you can also use vanilla. I hope you enjoy it cocinero!

Serves: 8

Difficulty: I can light the stove



500 ml milk

5 eggs

2 yolks

150 g of sugar for the egg pudding

150 g of sugar for the caramel

a cinnamon stick

4 tablespoons of water

1 tablespoon of lemon juice



In a pot, heat up the milk with the cinnamon stick until it is about to boil.

Cover the pot with a lid or a dish and remove from the stove. Let it cool down to room temperature.

To prepare the caramel mix the water, the lemon juice and the sugar.

Bring to boil until the caramel is golden. Be very careful, it is super hot!

Pour the caramel into the flan mould. Preheat the oven to 160ºC.

Mix the milk, the eggs, the yolks and the sugar. Tip: use a strainer to remove all traces of cinnamon from the milk.

Pour the mix into the flan mould. Use a bigger mould to cook the flan in a water bath. Fill half of the mould with water and put in the oven at 160ºC for 50 minutes.

You can use a knife to check that the flan is completely done. It has to come out clean. If it is ready let it cool down to room temperature and then put it in the fridge for at least 4 hours.
