Empanada gallega | Galician pie

Hi there cocinero! Today I show you how to prepare empanada gallega (Galician pie) 100% home-made. We normally have it as a snack with coffee. It is absolutely delicious!

Don’t forget to send me a picture of your empanada gallega when you make it! ❤️

Serves: 8

Difficulty: I can light the stove

For the dough:

600 g flour

100 ml water

100 ml olive oil

100 ml beer

a pinch of salt

For the filling:

300 g tuna in olive oil

2 eggs

1 red bell pepper

2 onions

500 ml tomato sauce (better if it is home-made)

In a big bowl mix all the liquid ingredients.

Start adding the flour little by little mixing it with the liquid ingredients.

Keep adding flour until it is thick enough to hold it in the hands.

Spread some flour on the countertop.

Work the dough for 5 minutes until it is smooth and soft.

Cover and let it rest while you prepare the filling.

Boil the eggs.

Cut the bell pepper and the onions in julienne strips.

Pour a little bit of oil in a pan (you can use the olive oil from the tuna if you want).

Add the bell pepper and the onions.

Fry gently until they become slightly golden.

Add the tuna and mix. Add your tomato sauce and mix. Let everything cook together until the tomato sauce thickens.

Set the oven to preheat to 200 ºC. Time to finish with the dough. Knead according to the shape of your oven tray. Keep in mind that you need two a bottom and a top cover.

Move the dough to the oven tray and pour your delicious filling.

Peel and cut the boiled eggs and add them.

Add the top cover. Make sure you close the edges at this point!

Add some egg in the top cover and pierce all over with a fork. Place in the oven at 180 ºC for 40-50 minutes depending on your oven or until it is golden.

Once the empanada is done let it cool down to room temperature.

It is now ready to eat. Enjoy cocinero!
