Croquetas de pollo y jamón | Chicken & Ham Croquettes


Hi there cocinero! Today I show you how to prepare croquetas de pollo y jamón (chicken and ham croquettes) 100% home-made. I learnt this recipe from my grandmother. At home, we normally prepare them right after making chicken and vegetable soup with the spare chicken and ham so that we don’t waste any food. I love them!

Serves: 8

Difficulty: I’m a little genius (and I’m very patient)



300 g chicken leftovers

150 g ham leftovers

100 g flour

300 g breadcrumbs

2 onion (optional)

500 ml milk

4 eggs

a pinch of ground nutmeg



Chop the chicken, the ham and the onion.

Warm olive oil in a pan.

Gently fry the onion until it turns golden.

Add the chicken and the ham. Mix and fry together for a couple of minutes.

Start adding flour little by little.

Mix well with the meat and let it fry gently for a couple of minutes.

Add the milk, then lower the heat and keep stirring until the milk and the flour are completely mixed and the bechamel is ready.

You can add more milk or more flour depending on which texture you prefer. Personally, I like it soft and creamy.

Whisk one or two eggs and prepare the breadcrumbs.

With the help of two spoons, take some croquetas dough and move it from one spoon to the other to shape it.

Soak into the egg.

Coat with the breadcrumbs.

And the croqueta is ready! Now go for the next one.

If you think you have too many croquetas you can freeze some. The day you want to eat them you can fry them directly!

Fry the croquetas in sunflower oil.

And the croquetas are ready! Crisp on the outside, creamy on the inside. Enjoy cocinero!
