Costillas con patatas | Rib stew


Hi, cocinero! The second Spanish food recipe of this week is a stew. This time, costillas con patatas (rib stew), a quick and easy traditional dish from Ávila.

Serves: 2

Difficulty: I can light the stove



700 g marinated pork ribs (marinated with sweet paprika, salt, pepper and oregano)

500 ml meat broth

100 ml white wine

2 tomatoes

3 potatoes

1 onion

2 garlic cloves

2 bay leaves

1/2 red bell pepper

1/2 green bell pepper

a pinch of saffron



In a casserole, heat up extra virgin olive oil and brown the pork ribs on all their sides.

Then, add the chopped peppers.

Five minutes later add the chopped onion.

Once the pepper and the onion are brownish add the garlic and mix. Let it fry for a couple of minutes and add the grated tomatoes, the bay leaves and the white wine. Cook all together for ten minutes.

Peel, chop the potatoes and add them to your stew. Add the broth. Cook all together for 20 minutes or until the potatoes are fully cooked and the broth has reduced.
