Arroz con leche | Rice pudding
You know I’m obsessed with rice (something quite normal among Valencians), so I had to introduce you the best Spanish dessert you can prepare with it: arroz con leche (rice pudding). It is super easy to prepare, you just have to cook the rice in milk with cinnamon and lemon zest. As always, the rice I use is Calasparra rice (you can find it in M&S), but if you can’t find it any round rice or paella rice should work perfectly. It is a quite heavy dessert so serve it fridge cold after a light lunch/dinner. I think it is perfect after a tapas Christmas lunch 😀

INGREDIENTS
1 l milk
200 g of round/paella rice
150 g of sugar
a cinnamon stick
25 g of butter
lemon zest
ground cinnamon
STEP BY STEP
In a pot, heat up the milk with the lemon zest, the cinnamon stick and the sugar.
Wash the rice with tap water for a couple of minutes.
Once the milk starts boiling add the rice and slow down the heat.
Add the butter and keep stirring the mixture for 17-20 minutes.
And your arroz con leche is ready! Enjoy cocinero!
